Different Ways to Cook Eggplant

As a vegetable, eggplant does not necessarily have the best reputation. But this is not due to the eggplant itself, this is because of the way it is frequently prepared. Breaded and fried, then layered with greasy cheese, eggplant suddenly becomes a caloric nightmare. Eggplant itself is not high in calories, however. It is actually made up of 92% water and therefore contains only about 14 calories per half cup on its own. It is also a good source of fiber, calcium, and potassium. So eggplant is a great choice to include on your dinner plate, and there are many healthy and delicious ways to prepare it.

First, before preparing your eggplant dish, take care to select your desired type of eggplant. At your local grocery store or farmers' market, you may find Japanese White Eggs, which are small and white; Thai eggplants, which are a small green variety of Kermit eggplant; and Black Beauty eggplants, which are the large, glossy and dark purple variety that we most commonly see today. As with all vegetables, I highly recommend growing your own, since this is the best way to insure that they are healthy, fresh, and free of chemical pesticides and herbicides. The variety that I have grown successfully and enjoy most is an Italian heirloom variety called the Rosa Bianca eggplant. Whereas Black Beauty eggplants sometimes tend to have bitter flesh, the Rosa Bianca has a mild flavor that is not bitter, and a very nice meaty flesh. It works well as a meat substitute in vegetarian dishes, and is excellent in the following recipes.

Eggplant Parmesan
In traditional eggplant parmesan, the eggplant is fried, which fills it with grease and negates its traditional value. Instead of frying the eggplant, try broiling it. Cut the eggplant into ½ inch slices, coat them with breadcrumbs, spray the slices with cooking spray, then broil them in the oven for 5minutes on each side. Serve the eggplant slices with marinara sauce and a slice of low-fat mozzarella cheese on top.

"Poor Man's Caviar"
An entire eggplant can be baked inside your oven, then split open and served with toast points or crackers, a dish known as Poor Man's Caviar. Simply wash the eggplant, cut off the stem and ends, and slice the whole thing in half length-wise. Brush the cut sides of the eggplant with olive oil, then sprinkle them with garlic, cilantro, lemon juice and/or basil. Bake the eggplant halves for 30-40 minutes (or until the flesh is nice and tender) at 400 degrees F.

Indian Style Eggplant
This dish is seasoned with coriander, a fragrant spice frequently used in Indian cooking. To make it, you will need 2 and ½ pounds of eggplant, 2/3 of a cup of clarified butter, 1 cup of chopped white onions, 4 large tomatoes, chopped, and 4 teaspoons of crushed coriander seeds. To begin, preheat your oven to 325 degrees F. Cut the eggplants in half, brush the cut sides with olive oil, and bake them for about 30 minutes, or until the flesh becomes soft. Remove them from the oven, and use a spoon to scoop the flesh from the peel and into a bowl. (Or, if you prefer, you can leave the peel on.) Mash the eggplant flesh with a potato masher. Set the bowl of mashed eggplant aside. Next, heat the clarified butter in a skillet over medium heat. Saute the onions for about 5 minutes, until the are translucent. Stir in the chopped tomatoes and the eggplant. Cook, stirring frequently, until most of the liquid has evaporated. Remove the skillet from the heat, and sprinkle the dish with coriander.

Grilled Eggplant
Eggplant makes a great addition to shish kebabs when cut into chunks. You can also place ½ inch slices directly on the grill rack. Brush on a little bit of olive oil to keep them from sticking, season them with salt and pepper, and grill them over direct heat until they are tender. It should only take about 3 minutes or so per side. These eggplant slices are excellent on top of couscous, or on a sandwich with Focaccia bread, goat cheese, and some fresh tomato and spinach.

Eggplant Lasagna
Thinly slice an eggplant lengthwise. Then use these slices as a substitute for noodles in your favorite lasagna recipe.

Ratatouille
Ratatouille is a classic hearty and filling eggplant dish. To make it, you will need 2 tablespoons of olive oil, 3 cloves of minced garlic, 2 teaspoons of dried parsley, 1 eggplant that has been cut into cubes, 1 cup of grated parmesan cheese, 2 sliced zucchini, 1 sliced onion, 2 cups of sliced mushrooms, 1 sliced green bell pepper, and 2 large tomatoes, chopped. Begin by greasing a casserole dish with 1 tablespoon of the olive oil and preheating your oven to 350 degrees F. Place the remaining 1 tablespoon of oil in a skillet and heat in over medium heat. Saute the garlic for 2 minutes, then add in the eggplant and parsley. Allow these to cook, stirring frequently, for 10 minutes. Remove the sautéed eggplant from the stovetop, and season it to taste with salt. Then spoon the seasoned eggplant evenly into the casserole dish. Sprinkle parmesan cheese over the eggplant. Arrange the zucchini slices on top of the eggplant, and add another layer of parmesan. Follow with the onion, mushrooms, bell pepper, and tomatoes. Top it all off with the remaining parmesan cheese. Bake for 45 minutes, and enjoy.

Veterans Day celebrates the men and women who enlisted to protect our country. There are many different traditions surrounding menus for Veterans Day. Below you'll find a few ideas to get your celebration underway:

Crab puffs, dip, chicken for a main dish, barbequed meals, and sandwiches are apart of a typical menu throughout the day. Simple, delicious food that is reasonably easy to prepare is definitely the order of the day.

For crab puffs you will need 1 quart of oil, 1 pound of crab meat, 1 package of cream cheese, 2 teaspoons of garlic salt, and 2 16 ounces packages of won ton wrappers. Heat the oil for frying, then in a bowl mix the crabmeat, cream cheese, and garlic salt together. Place the mixture in the wonton wrappers being careful not to over fill them. Then fry them for 2 to 3 minutes.

A dessert recipe you can prepare the night before (and save time) is a simple trifle. Purchase a plain sponge cake, two flavors of Jell-o crystals, tinned fruit of your choice, custard and cream from the grocery store. Prior to making the trifle, prepare the Jell-o, cut the sponge cake into small squares and whip the cream. Place the cake in the bottom of a serving bowl, topped by the fruit, custard, Jell-o (cut into pieces and mixed together) and finally the whipped cream.

Our veterans have served their life in protecting our country and people. Veterans Day allows us to honor everyone who has served and provide wonderful dishes for friends and family to celebrate those that are enlisted today. However you end up celebrating, it's important to keep the significance of the day in mind and reflect about the things that really matter in life.

Thinking up a catchy business name can seem like an impossibility when you've spent hours putting pen to paper and asked just about everyone you can think of for ideas.

However, to get the ultimate catchy business name, it can be a matter of doing some very simple research. The internet is a great place to start. You can go onto certain websites and type in the nature of your business and the search will throw up related words.

A dictionary is also a brilliant source of information. When you search for a specific word, very often the description will send you to another related word and then another. I'll bet there are words and terms in the dictionary that you hadn't even thought of!

Newspapers and magazines especially can give you great ideas for a catchy business name. Specialist magazines that are dedicated to the type of business you are in are going to be full of great ideas.

There are many different thoughts on how you should name a business. Some will recommend that you choose a name that is theme or name related, whereas others seem to think that an 'all purpose' business name is the way to go. Personally, I think there are many different factors that should be considered.

Is your business relating to just one topic or product? If this is the case, then a more specific name should be used. This usually indicates that you are in a small niche, so a catchy business name that is theme related will work best.

For example; Pizza hut sells pizzas. People know that when they go there, they are going for pizza. A catchy name for a thai restaurant could be 'Beau Thai'- and how about 'On 4 Wheels' for a driving school?

If your business relates to multiple topics that are in the same category, then a name that covers all the products is going to work best. For example; Google and Yahoo are known all over the globe. Their business covers thousands of different topics, so the name they chose was a generic one, but their business names mean absolutely nothing. In fact it's gobble-de-gook. But the names are catchy and people remember them.

Be bold, be humorous. People have always got a smile when they hear a comical catchy business name, and if it has caught their attention, they will remember you and more than likely check you out over the competition!

The Best Place To Celebrate New Years 2011

If people want to go to the best place to spend their holiday, it will be New Years 2011 in Miami. This is a great beach town in Florida, and many visitors flock there each year. Especially for New Years this is a special event. This will be a short guide on what family and friends can do when they spend time there.

The first thing that people think of when someone mentions New Years is having fun. This is definitely a fun town to be in. There are many wonderful restaurants to eat at, and people can go to the fun nightclubs. Especially on New Years, these will be the destinations.

The second place people like to think of is going to the beaches. South Beach is the popular site in this town, and one can enjoys days on the sandy beaches. If someone is looking for a hotel, there are many great places to stay. There are places that suit all budgets. It is a friendly town so people are there to help. One should look to see if there are any special events that they can attend. Looking for the sites where fireworks will be is also important.

Anyone who is looking to celebrate this New Years Eve must consider this city. It is a wonderful town with a lot of cultural heritage, too. People can enjoy the ethnic foods as well. There is no better place to get a mixture of all of these things. There are accommodations for everyone, and this city wants to ring in the New Year like every other city, or they might out do everyone else.

How to Make Crispy Duck Breast!

Hello and thank you for reading my article,

I want to talk about one of my favorite things in the world, a beautifully cooked medium rare crispy skinned Duck breast. It is something many restaurants seem to mess up and it drives me crazy. It is really very simple just requires a bit of time and patience and most importantly love.

First step is to trim your duck breast so you only have about a 1/4" of skin past the meat. Lightly score the skin of the Duck breast in a criss cross pattern. Make sure when scoring you do not cut into the meat.

Second step is to acquire a descent cast iron pan or just a solid pan, nonstick doesn't work well for this application. Do not preheat your pan before cooking the Duck. Pat dry the duck breast with paper towels and season with salt and pepper. Place the Duck breast in a COLD pan with no oil skin side down and then set to medium heat. If your doing multiple duck breasts be sure not to overcrowd the pan work in batches if you have to.

What your looking for is most of the fat to render out from the Duck. Continue rendering skin side down and don't let the entire Duck breast become covered in fat, drain off the fat continuously so you always have about a 1/4 inch layer of fat. By the time the skin is a beautiful even golden brown the fat will be rendered out and the Duck should be medium rare. If its Golden brown and crispy but you want it to cook more, baste it using a metal spoon with the Duck fat in the pan. You can add some sprigs of thyme to the pan while doing this to enhance the flavor. If however your Duck is a nice Medium rare but not yet crispy, crank the heat a bit and push down so the skin is pressed firm against the pan. You can also remove the Duck, Let your pan heat up and put it back in to crisp it up without overcooking. Once the Duck is to your liking rest skin side up in a warm place for 3-4 minutes. Slice and serve with your favorite sauce, a fruit based Demi Glace such as a Cherry Demi works great.

Which City Really Does Have The Most Restaurants Per Capita

Travel to most city websites around the net and you'll be surprised by how many purport to have more restaurants per capita than anywhere else. This is claimed by San Francisco; Madison, Wisconsin; Washington DC; and Shreveport, Louisiana. At least Canadian cities stake the same claim.

So which cities do have a legitimate claim to the title of "Most Restaurants Per Capita?" The National Restaurant Association (NRA) does publish a list of restaurants per capita per state. According to the Association, California has by far the most restaurants with a staggering 87,225 dining establishments. New York State comes in at a paltry 58,027. The top five is rounded out by Texas (53,631), Florida (41,901) Pennsylvania (31,466).

In terms of per capita per state, Washington DC tops the list according to NRA. The US capital region boosts some 0.4 restaurants per 100 people. Second is, surprisingly, Montana at .354 restaurants per 100 people. Rounding out the NRA's top five are Rhode Island (0.304 per 100) Vermont (.303 per 100) New York (.301 per 100). If you are a little hungry you might want avoid the three states with the fewest restaurants Mississippi, Kentucky and Utah.
In terms of North American cities, it is a little harder to ascertain who can claim the title of city with most restaurants per capita.

Here are ten cities with more than 100,000 people that have made the claim. But who has the real claim? Who offers the cuisine searcher or just plain hungry shopper the most choice? Who can claim the title of The Restaurant City.

The city of San Francisco is a city of 744,230 people and claims to have 2,662 restaurants within the city boundaries. There is no doubt that the standard of restaurants in the city of the bay is exceptional. If you just include San Francisco properly your density is 279 people per restaurant. But because costs of housing the number of people living in the city proper has declined while the number of businesses including restaurants, San Francisco is a distorted number. If you count the metro area, the number of restaurants climbs to 4,300 restaurants (we won't include hundreds more in the nearby wine country of Napa and Sonoma). If you consider the metro area population of 7,168,176 and divide by 4,300 you get a per capita density of 1,667 people per restaurant.

Winnipeg is a city on the edge of the Canadian prairies that boasts a broad cross section of immigrant communities all of whom have their local ethnic cuisines. If you want French toast for breakfast, perogies and sauerkraut for lunch , and Vietnamese imperial rolls for dinner then this is the place to come. This city regularly claims to have more restaurants per capita than any other city. Some websites claim the city has 900 restaurants but in reality there are just 478. With a population of 619,544 Winnipeg can claim only one restaurant per 1,296 snow-bound Canadian.

Victoria. This city on Vancouver Island and capital city of British Columbia, Canada regularly makes the claim that it has the "second highest number of restaurants per capita," which is perhaps clever psychology as the city has never indicted which is top. With a population of 335,000 the city claims to have 265 Italian, French, Greek, East Indian, Vegetarian, German, Dutch, Mexican, Chinese, Japanese, Vietnamese, and Thai eateries. That means Victoria has a restaurant per 1,264 people. But with its spectacular location halfway between Vancouver and Seattle, you'd hardly care if its claim is a little off.

In New York City no one cooks at home and by the time you've heard of a restaurant it has probably closed. Restaurants open and close with alarming alacrity in the Big Apple. On average, the city of New York can claim 6,650 dining places from the chic Lespinasse to the greasiest corner diner -- the most restaurants in any one place on the continent. Yet with 8,168,338 people, New York can only claim to have 1, 228 people per restaurant. It might seem that every second building in New York is a restaurant but they have to cater to a lot of vertically housed residents. That explains why it is hard to find a table some nights.

The one Canadian city that can make a great claim to have the most restaurants per capita is Montreal in the province of Quebec. With just over 5,000 restaurants in the metro island area, is appears there are at least one restaurant on every street corner. With its diverse immigrant population and French majority, the city has every type of cuisine available from Lebanese to continental French to native Canadian. Some 3,720,000 Quebecois live in the metro area making Montreal the second largest French speaking city in the world. Giving it a restaurant per capita number of 744.

When you leave Austin you enter Texas so the saying goes. This funky city in central Texas has 1,088 eating places to enhance its reputation as Music City USA. That list includes 128 establishments in or around the University of Texas alone. Austin's burgeoning population is currently 690, 252 making their people to restaurant ratio 634.

Louisville, home to the Kentucky Derby, is a small city of just over half a million people. Pap John's Pizza and Yum Brands, the parent company of A&W, KFC, Pizza Hut and Taco Bell, both make Louisville their corporate home so it is not surprising that that this city on the Ohio River has 1,089 restaurants. That makes for 510 people per restaurant.

Madison owns the rights to the title of "city with the most restaurants per capita" and the capital makes the claim throughout its literature. However, pining down the actual number of restaurants is pretty hard. The best list available points to 437 restaurants that caters to 221,551 people in the Wisconsin city. But that makes for only 506 people for each restaurant. Good for only third on this list.

Wichita, Kansas is not usually a city that leaps to mind when one thinks of cuisine. But with an ethnically diverse work force, the largest city in Kansas has a reputation for cultural diversity and is located in the breadbasket of America. The 739 restaurants in town have only to cater to 360, 715 people. That translates into 488 people per restaurant, good for second on our list.

Dallas. This Lone Star State city has a population of 1,250,950 and a selection of restaurants that add up to 2,666. While the city is known for its BBQ and steak houses there is a surprising mix of great eateries from chic to basic. That means every restaurant, fast food place and steak house in Texas' third largest city can boast an potential pool of just 469 people. Making this city the winner of the title "City With The Most Restaurants per Capita."

This was filmed the day after Thanksgiving (Black Friday) and the result was delicious as usual. I used a combination of white and dark turkey meat, some of my favorite veggies and CurrySimple's yellow coconut curry stir-fry sauce. Since the turkey was already cooked this was ready in no time at all.

What Makes A Good Employee?

I know that I am being biased however I would like to think that I am a good employee. The question is; what constitutes a good employee? In this article I will be answering this question by writing about what I believe makes a good and worthy employee.

A good employee will look smart at all times and therefore will make an effort with their appearance. They will keep good time, for example will arrive for work on time and will be more than happy to work additional hours when required.

A good employee will be very flexible; they will be willing to change their working hours or the location of their work to suit the company they work for. They will also be happy to run errands which may be outside of the job description such as collecting sandwiches and visiting clients.

Then of course is the job at hand. A good employee will work to the best of their abilities and will take a pride in the work that they do. They will show an interest in learning new tasks and in taking any industry examinations that are available. They will also be open to any new changes the business decides to make.

A good employee will have respect for their employer and will not leave them in the lurch by phoning in sick when they are perfectly fit to attend work etc.

A good employee will show a positive attitude in and out of the workplace. An employee that is always criticising and moaning can have a very damaging and negative affect on productivity.

These are just a few of the qualities that a good employee should have, and guess what? Yes, I have them all.
